Tasting Note:
A real gem is Scopeto del Cavalli's Brunello di Montalcino. Produced in just 1,000 bottles, it is as hard to find as it is delicious. The owner Beatrice Mathews Cazac treats the vineyard like a garden, using organic and biodynamic methods. Despite the generous complexity, structure and tannic strength, the wine has a greedy and juicy fruit that makes it drinkable. In the middle of the vineyard, olive and fruit trees grow alongside seasonal wild flowers. The constant use of permaculture and biodynamic techniques increases and supports biodiversity and stimulates the symbiosis between olive trees and vines.
Vinification:
Scopeto del Cavalli was the first Montalcino farm to obtain organic certification. In the area it is the smallest winery, with a production of about a thousand bottles of Brunello per year.
